Here's a solution. Take martial arts classes. Then when you cook meat, don't use a cutting board. Throw it up in the air and slice it to bits like those Japanese chefs at Benihana.

Maple is best for a wood cutting board. Keep them clean as described already and can be finished with "salad bowl finishes", or plain mineral oil.

We only use wooden cutting boards. Just before the holidays I replaced an old built-in made of plywood with solid maple. We're not as fastidious about cl
eaning them as we should be, but we've never gotten sick, either.

        wood cutting boards.....

You can bet that MAPLE cutting boards are safe and one of the best
that you can get. We have one in the kitchen that has been there for 20-30 years never any problems with bacteria in or on it! It is always cleaned
with soapy, warm water and mild bleach. After a few thousand uses it will
begin to discolor somewhat....I take it to the shop and re-condition it
completely, and give it several coats (soaking ones ) with butcherblock
oil ( basically mineral oil) and put it back to work again. eezlock
